What changed

A reformulated batter run to roughly half the finished weight — about 4 g a sheet instead of 8. Same four ingredients, same 22 cm round, less of it.

What it costs you

A thinner sheet is a more delicate sheet. It wants a shorter dip and a lighter hand. If you'd rather trade calories for durability, that's our Easy Roll.

It isn't zero-carb and we won't pretend otherwise — 6.5 g a serving. Low enough for most keto and calorie budgets, not a free food.

Ten seconds

Easier than it looks. Genuinely.

No cooking, no pan, no skill. If you can wet a cloth you can roll one of these.

Dip

Warm water, five to ten seconds, as printed on the pack. Lift it out while it still feels slightly firm — it keeps softening on the plate.

Fill

Lay it flat. Pile the filling low and just below centre, leaving about 3 cm clear at each side.

Roll

Fold the two sides in, then roll away from you, firmly. It seals itself — no glue, no egg wash.

The one mistake everyone makes: soaking too long. This sheet is thinner than most, so it reaches the right point early in that window — pull it while it still feels slightly firm.

Gỏi cuốn tôm thịt

You need: 8 sheets · 16 poached prawns, halved lengthways · 200 g boiled pork belly, thinly sliced · 100 g rice vermicelli, cooked and cooled · butter lettuce · mint · garlic chives · nước chấm to serve

1.  Dip a sheet, lay it flat, and put four prawn halves cut-side down in a line just above the centre — they show through the finished roll.

2.  Below them lay lettuce, a small nest of vermicelli, pork, mint.

3.  Fold the sides in, roll up tight from the bottom, tucking a garlic chive so it pokes out one end.

4.  Serve immediately with nước chấm — fish sauce, lime, sugar, water, chilli and shredded carrot.

Air-fried crispy rolls

You need: 10 sheets · 300 g minced pork or firm tofu · 1 carrot, grated · 1 small onion, diced · a handful of glass noodles, soaked · 1 tbsp fish sauce · black pepper · a little oil to brush

1.  Mix the filling. Dip each sheet for 3 seconds only — much less than for fresh rolls. Too wet and it steams instead of crisping.

2.  Fill, fold, roll tight. Brush all over with oil.

3.  Air fry at 180°C / 350°F for 8 minutes, turn, then 4 minutes more until blistered and golden.

4.  Rest two minutes before eating — the shell crisps as it cools.

Check these three numbers against each other before printing. The pack artwork gives a 12 g serving, 28 calories, and a 0.3 mm sheet against a standard 0.8 mm. Those don't reconcile: 12 g of dried rice and tapioca is closer to 43 calories than 28, and a sheet at 0.3 mm on a 22 cm round would weigh nearer 3 g than 6 g. One of the three — gauge, weight or calories — is wrong, and the Nutrition Facts panel is a regulated declaration. Get the factory's lab figures and fix all three together.

Where it comes from

Look closely and you can see the bamboo.

Every sheet is steamed thin over water, laid out by hand on a woven mat, and dried in open air. The faint basket-weave pressed into the surface is the mat's — the one detail a machine cannot fake, and the reason our sheets carry a filling without splitting. Made in the Mekong Delta, by people who have made bánh tráng their whole lives.

Before you buy

What's different in the formula?

The sheet is rolled far thinner — roughly 0.3 mm against a standard sheet's 0.8 mm — and the batter is reformulated to hold together at that gauge. Same four ingredients, same full 22 cm round, so your roll comes out the same size with less wrapper around it.

Does it taste different?

Not really. Rice paper is close to neutral to begin with. What you notice is texture: a lighter, more delicate wrapper that disappears behind the filling.

Is it keto?

6.5 g of carbohydrate per two-sheet serving, which fits most keto budgets for a meal wrap. We'd rather give you the number than the label — "keto" has no legal definition and everyone's target is different.

Is the sheet more fragile?

Yes. At roughly 0.3 mm against a standard 0.8 mm, that's the honest trade for a lighter wrapper. Take it out of the water at the early end of the five-to-ten seconds and handle it a little more gently. If durability matters more than calories to you, buy the Easy Roll instead.

Do I need to cook anything?

No. Rice paper needs water and nothing else. If you want them crisp, the air-fryer recipe above does that — but fresh is how they're eaten in Vietnam.

Can I make them ahead?

A few hours, yes. Keep them under a slightly damp cloth in the fridge and don't let them touch each other — rice paper sticks to rice paper. They don't freeze.

How many rolls will one pack make?

Thirty rolls, or fifteen servings at two each. A 22 cm sheet makes a substantial roll, roughly the size of a small burrito.

Is it really gluten-free?

Rice and tapioca only, produced on rice lines and tested lot by lot to under 20 parts per million — the FDA threshold. No wheat anywhere in the facility.
